Today’s Frugal tip is a super easy & affordable way to re-use your pickle juice. Just make more pickles.
It truly is as simple as chopping up a cucumber and putting it in the jar with the remaining pickle juice. Let the juice set 1-2 weeks in your fridge, and you have a new jar of pickles!
Now these new pickles won’t have the same shelf life as your previous batch……..as you did not can or sterilize the jars….but they are certainly fresh for 2-3 weeks in your fridge!
You can also add a fresh clove of garlic to jack up the flavor….or a few pickling spices if you choose…or keep it super simple and just add in your sliced cucumber! I paid .39 cents for a large cucumber at Aldi this week. Not too bad to make a new jar of pickles:-) In the summer we can get Cukes for 3/$1 in our parts.
Another option is my hubby loves pickled beets. I buy them as a special treat for him. Dump in a can of beets (his favorite are diced) and in a week or two pickled Beets!!
