7 Day Okra Challenge ~ Who’s In?

Ahhh Okra…..Just the name brings a cringe to many folks.  Some have not even heard of this vegetable.  Others wish they could forget this Southern style veggie….but don’t write off this little gem just yet…..

The health benefits of this Vegetable are astonishing really….and don’t just take our word for it….

It contains potassium, vitamin B, vitamin C, folic acid, and calcium.  It’s low in calories and has a high dietary fiber content.  Recently, a new benefit of including okra in your diet is being considered.  Okra has been suggested to help manage blood sugar in cases of Type 1, Type 2, and gestational diabetes (Healthline.com).

In the THM new plan book pages 132-135 have been dedicated to Okra and all it’s benefits.  Totally worth the read.

So here is the Challenge….I am going to eat 1 cup of Okra daily for the next 7 days starting tomorrow…..September 1st

I will post my recipes and all my thoughts each day…….My freezer is full and I’ve read where this can really jump start weight loss, and the health benefits alone are worth giving it a try…

I have found frozen Okra at Walmart….Hannaford & Price Chopper for around $1.49 Bag!

Today I am going all mad Scientist in my Kitchen….it’s not to late to reach our 2016 goals!!

Simple Success ~ Chocolate Pecan Muffin Recipe

Muffin in a Mug (S)…here is my recipe for my favorite: 1 egg, 2 Tblspn. THM Baking Blend, 1 Tblspn. ground flax meal, 1 Tblspn. Trader Joe’s Unsweetened Cocoa, 1 Tblspn. water, ½ teaspoon baking powder, 2 teaspoons THM Super Sweet Blend, 1 Tblspn. Aldi organic, unrefined, cold pressed coconut oil…all mixed in a mug (consistency should not be thick & pasty, add a drop or two of water if too thick…or runny & loose, add a dash or two of Baking Blend or ground flax meal)…microwave for 45-60 seconds (or bake at 350 degrees for 8 – 10 minutes)…once cooked, I add to the top Buttah, ½ a Tblspn. of nuts, and ½ a Tblspn. of Hershey’s Sugar Free Chocolate Chips…this is perfect for those of you with a hefty appetite in the morning…like me!

Why Didn’t I Try These Sooner??

So Hot Dogs were on the menu tonight per my Trim Healthy Hunks request.  I LOVE makin’ my man happy so Hot Dogs it is.  I remembered reading about an Everything Bagel Dog on the THM thread a while back, but for the life of me I couldn’t remember the recipe.

No Fear…Google to the Rescue.  I found this lovely blog…The Primitive Palate that had the recipe posted, but as in all things THM, I had to make it my own!  Please refer to the above site for the full recipe, as well as all the actual ingredients.  She has really nice photos too!  Grocery Day is Thursday, and I was out of many of the ingredients, but I didn’t let that stop me!

First, the recipe called for 1.5 Cups shredded Mozzarella.  Yep I was out….so I substituted Cheddar.  Plus 2 Tablespoons Cream Cheese.  Microwave 1 min (or until melted) and mix well.

Here is the THM Baking Blend (She used Almond Flour) with 1 egg.  I also added 1 Tablespoon H20 to the mixture.  I did  use the 1 teaspoon Xanthan Gum the recipe called for. Mix well…

 Mix the Cheese and Baking Blend Together.  I kneaded it a bit the same as you would any dough.  She also suggested you let it rest a bit, which I did. A whole whopping 5 minutes to be exact!

OK….so you can clearly tell I’m not a photographer.  Did I ever tell ya’ll that I did take photography my Senior Year in High School?  Ahem…that was a few years ago now.  At any rate, these little gems went together lickity split.  The recipe called for an egg wash.  Well my workin’ out at the gym College Guy is having eggs for breakfast every morning to increase his Protein intake.  The recipe called for 2 eggs.  One to mix with the baking blend (or Almond Flour) and one for an egg wash.  Yep you guessed it, I only had had One, but  like every good Trim Healthy Mama I had a carton of egg whites in the fridge, and they worked perfectly!  Sprinkled with my Version of the Bagel Topping….I didn’t have Poppy Seeds or Sesame Seeds.  Didn’t have any minced garlic either.

I did have my favorite all time spice, Trader Joe’s 21 Seasoning Salute.  I added some Celtic Salt, and Minced Onion.  Perfection I tell ya!

Hubby and the College Guy had Macaroni Salad with their Bagel Dogs.  I had THM Sweet Creamy Coleslaw (Pg. 230)

served with fresh Cucumber and some Sauerkraut.  These were so yummy and my family LOVED them.  I told my hubby that I substituted many of the ingredients.  He said, “Don’t change a thing these are delish!!”

Like so many times….I wonder, “why didn’t I make these sooner?!?!”.  They are super flavorful, and you don’t miss the Hot Dog Bun at all!!

Seriously…give these a try….You won’t be disappointed!

Dear Friends….Over the past few weeks, you may have seen some changes around here……We just loved the Platoon name we all chose, and have decided to change the name of our blog!  Both Sandy & I feel it better represents who we are and our theme…….that we are truly 2 Mama’s on a Mission to Balance, Joy, Health & Wellness.

We know some of you had comments pending…but they have now been approved as the back up stage has been finalized.  The posts will be scant as we catch our breath from Boot Camp and from revamping the page, but rest is KEY to success on this journey.  Please be patient with us as we make this move.  We will be posting here and on our FB page more regularly shortly…..Our FB name has changed as well!!!
